PERFORMANCE PER HECTARE: Muscat St Vallier 100-150 q; Chenin
Blanc 70-90 q

TYPE OF PRUNING: Short pruning with 2-3 buds per branch and a
bud load of 30-40 per plant

HARVESTS: Harvest occurs twice annually. Early July for the
first harvest and early November for the second. Grapes are hand-picked with
meticulous care to ensure optimal selection

VINIFICATION: Fermentation in stainless steel, at a
temperature of 14-16 °C. Aging in the tank for five months and then at least
three months in the bottle before being marketed

ANALYTICAL DATA: Alcohol 12 % vol. – Total acidity 6,5 g / l
– pH 3.4

SERVING TEMPERATURE: 7-10 °C

ORGANOLEPTIC DESCRIPTION: This wine is fresh, mineral, and
aromatic. It presents a pale yellow color and a rich bouquet of yellow-fleshed
fruits, harmoniously blended with delicate white floral notes of citrus
blossom and jasmine. On the palate, it’s savory, fresh, and well-balanced,
offering both elegance and versatility

LONGEVITY: To be enjoyed within 2-3 years

FOOD & WINE: Excellent as an aperitif and perfectly suited
for a wide range of dishes, including sweet meats, seafood, soft cheeses,
green vegetables, and spicy or garlicky cuisine. Serve in medium glasses width
without flaring. Open at the moment
