ISOLA RUBINO DOLCE

Grapes: Malvasia Nera

Production area and terroir: Gerokgak, Buleleng – Bali.
The presence of marine fossils in the territory, the sun exposure and a typically volcanic soil determine in the grapes intense qualitative characters.

Soil: Volcanic, Sandy

Training system: Pergola

Type of pruning: Short pruning with 2 – 3 buds per branch and a load of 50-60 buds per plant.

Performance per hectare: 90-150 q

Harvests: First decade of July for the first annual harvest, first decade of November for the second annual harvest. Manual harvest with careful selection of grapes.

Vinification: Fermentation in stainless steel tanks at a temperature of  18 – 20°C
Aging in the tank for six months and then at least three months in the bottle before being marketed.

Analytical data: Alcohol 12,5 % vol. Total acidity 6 g / l, pH 3.4

Serving temperature: 12-16 C°

Longevity: To be enjoyed within 1-2 years.

Organoleptic description:
This light red is fresh and mineral, it has light ruby red  color. To the nose it offers aromas of fruit with red flesh: strawberry, raspberries, sour cherries and berries combined with floral notes (roses, violets), and spicy notes. Soft and enveloping on the palate, it is sweet but not cloying, slightly sparkling, fresh with good intensity. It is an ideal table wine to drink in any situation.

Food & Wine: Excellent as an aperitif wine and with any light food. It can be combined with dessert. Serve in medium glasses width without flaring. Open at the moment.
