Grapes: Malvasia Nera & Syrah

Production area and terroir: Gerokgak, Buleleng – Bali.
The presence of marine fossils in the territory, the sun exposure and a typically volcanic soil determine in the grapes intense qualitative characters.

Training system: Pergola

Type of pruning: Short pruning with 2 – 3 buds per branch and a load of 50-60 buds per plant.

Performance per hectare: Syrah 80-100 q; Malvasia Nera 90-150 q

Harvests: First decade of July for the first annual harvest, first decade of November for the second annual harvest. Manual harvest with careful selection of grapes.

Vinification: Fermentation in stainless-steel tanks at a temperature of 20-22 °C.
Aging in the tank for nine months and subsequently at least four months in the bottle before being marketed.

Analytical data: Alcohol 13,5 % vol. Total acidity 5,7 g / l, pH 3.5

Serving temperature: 14-17 C°

Longevity: Over 3 years.

Organoleptic description: This wine is elegant, fresh and fruity. It has a ruby red color. To the nose it offers aromas of fruit with red flesh, among which cherries, plum, mulberry, blueberries and blackberries.
Combined with balsamic notes, spicy notes (black pepper, cinnamon, tobacco, vanilla) and chocolate notes they grant to the bouquet a great body and complexity of perfumes. Soft and enveloping on the palate.

Food & Wine: Perfect with appetizers and dishes based on eggplant or mushrooms, roasted or stewed meat, cheese, and cured meat. Serve in medium-sized glasses. It can be uncorked at the moment.
