PRODUCTION AREA, TERRITORY: Gerokgak, Buleleng – Bali. Our
volcanic soil, sun exposure, wind, climate, and topography create an intense
and unique character in the grapes grown and wine produced
SOIL: Volcanic – Sandy
TRAINING SYSTEM: Pergola
TYPE OF PRUNING: Short pruning with 2-3 buds per branch and a
bud load of 30-40 per plant
PERFORMANCE PER HECTARE: 50-70 q
HARVESTS: Harvest occurs twice annually. Early July for the
first harvest and early November for the second. Grapes are hand-picked with
meticulous care to ensure optimal selection
VINIFICATION: Fermentation in stainless steel, at a
temperature of 22-24 °C. Aging in the tank and partially in French oak
barriques for 2 years and then at least 1 year in the bottle before being
marketed

ANALYTICAL DATA: Alcohol 13,5 % vol. – Total acidity 5,4 g /
l – pH 3.5
SERVING TEMPERATURE: 14-16 °C
ORGANOLEPTIC DESCRIPTION: This red wine is sensual and
enveloping, revealing an intense ruby color. The bouquet is rich with ripe red
and black fruits, layered with spice and balsamic undertones. On the palate,
it’s well-balanced, persistent, and marked by savory depth and character
LONGEVITY: Over five years
FOOD & WINE: A versatile wine, it pairs beautifully with
pasta, lasagna, roasted or stewed meats, cheeses, and cured meats. Serve in
medium-big glasses width without flaring. Can be opened at the moment,
although it’s recommended to decant it for half an hour
